Year 2 Day 344 – “Living the Dream”. Saturday, 4/8/2023. It was a busy day. Up early at five am cooking for Justin and his family. Made two new deserts. Carrot Cake Scuffins, which are part scone and part muffin. Great to have with a nice cuppa.
Then the most decadent desert ever. Lemon-Lime Bars.
Also made my old favorite recipes, Potato Egg Salad
and Stuffed Shells. It is rare that I cook this much anymore. It was fun. With that we had salad and Spiral Ham. We never ever have Spiral Ham. I think I have made it three times in my long long life. Had to text my son in law, Jamie to be sure I was making it correctly. He is the cook in the family. The funny thing is I cooked it with the piece of plastic on the end of the bone. Never noticed it. Of course, I take it out of the oven and Bobi notices it. Yup it was embarrassing. In the morning while I cooked, Steve worked on rearranging the flower beds around the house and putting Mulch down.
He doesn’t understand why someone would go to all the trouble to make food from scratch. Like grating the carrots and using fresh lemon and lime zest and juice. I find it very satisfying to take natural products and make something yummy. Justin’s family came over and we had a good time visiting. Of course, this always happen. When I am busy socializing, I forget to take pictures. Boohoo. I took a few after Marley and Austin had already left and Koral was asleep on the couch.
Happy Easter weekend! This weekend brings lots of memories of when I was younger, and we would go out to Scranton and stay with my aunts, Uncles, and cousins. We would all wear our finest bonnets and head to church. Fun times and good memories. Take time and reflect on some of your good memories.
