Cook this for a great one pot recipe that everyone will enjoy. This recipe serves 2, but can be adjusted to serve as many as you want. Do step 2 the prep work early in the day and store in a container in the refrigerator. That way you can be enjoying a glass of nice wine with family and friends instead of cutting things up. I use the Barilla Protein+ spaghetti and would highly recommend it. We started eating the Barilla Protein+ pastas about 10 years ago. It is the only pasta I cook now.

Ingredients
- 1 Chicken Breast cut into cubes
- 2 chopped fresh tomatoe
- 1 1/2 tablespoons butter
- 2 cloves chopped garlic
- 1/2 chopped Jalapeno pepper
- 1/2 teaspoon Dash salt-free garlic & Herb seasoning blend
- 6 oz spaghetti or whatever amount you would normally cook for dinner.
- 1 5.5 ounce bag of fresh spinach
- 1 1/4 cups freshly grated Parmesan cheese

If you want to do some preparation in advance you can:
- Cut your chicken breast into cubes
- Chop your tomatoes
- Chop your garlic
- Chop your jalepeno

And store in one container in the refrigerator with the Dash salt-free garlic & Herb seasoning blend sprinkled on top:

Directions to prepare and serve:
- Add water to a large pot and bring to a boil
- While waiting for water to boil prepare your other ingredients, if you have not done the advance preparation. I normally do not Grate the Parmesan cheese earlier. So now is a good time to grate the parmesan cheese and refrigerate.
- Cut your chicken breast into cubes
- Chop your tomatoes
- Chop your garlic
- Chop your jalepeno
- Grate your Parmesan cheese.
- Add the pasta to the boiling water
- Cook until al dente.
- Remove 3/4 cup of the pasta water before draining pasta.
- Drain the pasta and leave in the colander.
- Using the same pot
- Melt butter over medium heat
- Add
- The advanced prepared ingredients or
- The chopped garlic, chopped tomatoes, cubed chicken, chopped jalepeno and Dash seasoning blend
- Cook 25 minutes
- Add the pasta
- Add the spinach
- Cook until spinach is soft and cooked adding reserved pasta water as needed to keep pasta from drying out.
- Add grated parmesan cheese and toss until combined and melted slightly.
- Serve the pasta on individual plates, in a large bowl for table serving, or place pot right on the table.
- Grate extra parmesan cheese on top if desired. I personally find there is plenty in the spaghetti and don’t need any on the top.
