Day 11 – Living the Dream.
We arrived at the homesite this morning and found the front door was was open and two mice had found the peanut butter in the trap. First thing, we screwed the front door closed and threw the mice out in the wheat field behind us.
The shed is coming right along. From here on, the shed is now officially the cabin. No shirt on Steve’s head today. Straw hat arrived.
We bought the cabin front door and a window today.
Finally, we are eating something that is not fast food. Made Chili for dinner.
But, of course after the onions were all cut up and ready to be cooked with the ground beef, I realized we didn’t have a can opener here. All of our belongings, except for 2 suitcases, a few smaller bags, and all the tools we could load into the back of our pickup are in storage in Pennsylvania. Had to quickly run out and find the closest store. Just happens to be a General Dollar. They are all over the country and are expanding. First meal here was fantastic.
Here’s the Chili recipe that my mother used to make. So easy and good. Serves 4, but can be be altered to serve more. We are large eaters and can eat the whole pot in one night though. We usually try to save enough for a second night on hot dogs aka chili dogs.
1b ground beef 2 large onions 2 – 16 ounce cans Dark Red Kidney Beans 1 – 16 ounce can stewed tomatoes 1 tablespoon Chili powder
Cut the onions into small pieces and add to a large saucepan with the ground beef. Stir and cook on medium heat until onions and beef are fully cooked. Onions should be soft. Add the 2 cans of beans including the juice, the can of stewed tomatoes, and the chili powder. Bring to a boil and simmer for a 1/2 hour or so. It will thicken up and be so so good. Fantastic with some nice fresh bread. Enjoy – I want some now.
